Traditional Porchetta $28/#
Seasoned, rolled and tied pork belly with fennel, garlic, black pepper, rosemary, lemon, red pepper, salt and sugar. Sold raw/uncooked.

Sirloin Ham $23/#
Whole, boneless sirloin cured ( not smoked! ) with salt, nitrate and light brown sugar. Ham is tied and sold raw/uncooked. Suggested cooking methods: Poach or Smoke.

Herbed Eye Round Roast $24/#
Boneless ham roast seasoned with parsley, pepper and bay leaf. Roast is wrapped in caul fat and tied for roasting, sold raw/uncooked.
